a few things i've been enjoying lately...
love this for breakfast:
whole grain bread toasted with almond butter, sliced bananas drizzled with real maple syrup--yum!
chris & i get on an omelet kick every once in a while and we just crave them--especially for dinner.
this one was especially good:
2 eggs with sauteed mushrooms & red peppers, topped with el fenix salsa.

these are the easiest cookies ever. mckinlee made them when she got home from school.
1 box cake mix
1/2 c. oil
2 eggs
any extras like chocolate chips, nuts, etc.
bake at 350 for 8-11 minutes
these were a vanilla cake mix from paula deen--so tasty!
for a quick lunch i have been loving these frozen meals from kashi. they have so much protein, fiber & whole grains in them. my favorite here is the chicken pasta pomodoro (with a little added sea salt & parmesan)
usually for breakfast i have a burrito with 1 egg, 1 slice of turkey (chopped) & some grated killaree cheddar (our favorite cheddar from whole foods). i also love fruit salad and find that i will eat a ton more fruit if i make a big fruit salad. if you add coconut it's even better!
some mornings if i'm not into eggs i will have a yogurt. greek yogurt is so yummy and so much better for you than regular yogurt--less sugar and tons more protein. my favorite is the chobani lemon, but i didn't have any. today i had the oikos vanilla & added some blueberries & agave. pretty good!

yum!! i'm hungry just reading this (as i'm eating my 100 cal choc. pretzels ;) i looked for the chicken nuggets today at target-of course they don't have them :( the chicken pomodoro is my favorite kashi meal too! and i'm trying to recreate the zoe's kitchen meal sort of so i got romaine lettuce and cooked chicken strips with some of mom's zoe's dressing and some pita bread and hummus-an easy yummy lunch.
